The bitterness of apricot kernels is a property given by a substance called amygdalin (vitamin B17), which is indeed a toxic substance, but only in large doses. In recommended doses (up to 10 apricot kernels per day) it is proven to be effective in controlling cancer cells growth. Damaged cells cannot metabolize amygdalin, so they simply die off. Besides its cancer preventing properties, vitamin B17 is also connected to maintaining blood pressure and soothing arthritis pain.
